Under the general supervision of the Dietary Services Manager , the Assistant Dietary Services Manager position assists with the responsibility for residents receiving the highest quality nutrition and food service available within economic constraints, consistent with requirements identified on individual care plans and with applicable laws, regulations, and professional guidelines. The Assistant Dietary Services Manager may assist in planning, developing, directing and controlling the activities of the Dietary Department. Functions with direction from the Dietary Services Manager, and within constraints of established policy and procedure, consistent with accepted nutritional, dietary, and food service standards of practice.
Documented completion of State-approved Food Services Supervisor Course.
High school diploma or equivalent.
Certified Food Protection Manager
ServSafe Certification preferred

Assist with the implementation of procedure/instruction manual specific to department; assist in assuring correct procedures are implemented in preparation and serving of food and result in correct quantity, quality, temperature, and appearance of food served.
Assist Dietary Services Manager with implementation of menus, adjusting/substituting only within parameters allowed by dietitian, regulations, standards of practice.
Assist with maintenance of records, receipts and budgets regarding dietary operations.
Participate in interdisciplinary care plan conferences as requested or required.
Document the dietary component of residents’ care plans as requested.
Assist in implementing the dietary component of residents’ assessments and care plans.
Assist with monitoring the Dietary Department compliance with regulations governing long-term care.
Assist Dietary Manager with concerns about food services from residents/families in accordance with positive customer relations principles.
Assist with the maintenance of a perpetual food/supplies inventory, immediately correcting discrepancies or shortages.
Maintain menus for required retention period.
Assure adequate policies and procedures are in place to manage emergency situations or “systems breakdowns” with minimal negative impact on food service to residents.
Monitor deployment of dietary personnel; assist Dietary Manager with schedules adjust as needed to provide adequate staff levels on duty.
Communicate daily with dietary personnel at all levels, providing clear, concise information and feedback as well as specific assignments; assist with coordinating and implementing dietary policies and procedures.
Assist with new employee orientation and on-job training, and compliance with federal and state training requirements, i.e., OSHA and OBRA.
Assure implementation of effective educational programs for dietary personnel in accordance with applicable regulations, professional standards, and company policy; assure adequate new employee orientation and on-job training, and compliance with federal and state training requirements, i.e., OSHA and OBRA.
Implement effective employee relations as a tool for increasing retention/decreasing turnover.
Monitor staff performance of duties, adherence to policy and procedure, and compliance with occupational safety procedures; investigate incidents/injuries and non-compliance; take corrective action as needed.
Be responsible for assisting residents to and from activities of their choice and to modify schedules, meal times, therapies, etc. to maximize involvement in activities.
Observe and abide by all HIPAA rules and regulations to ensure that personal health information is protected during its collection, use, disclosure, storage and destruction within Care Initiatives; and to ensure only the minimum necessary information is known to function in this position.
Delegation of Authority
Authority is delegated to the individual in this position to:
Implement dietary and food service policies and procedures to meet residents’ needs and in compliance with federal, state and local requirements.
Assist with dietary employee scheduling.
Follow a monitoring system for the dietary and food service department and make recommendations for implementation to assure compliance with federal, state and local requirements.
Supervise preparation of menus to meet residents’ dietary needs.
Follow appropriate dietary plans in compliance with physicians’ orders.
Supervise the entire operation of the dietary department in the absence of the Dietary Services Manager.
